What is the most important element in Food Photography?

Great lighting is the most important element for great photography. Good lighting will create specular highlights, dimension,detail and contrast.

How I create great lighting

I typically use one light source, feather the light and bounce it back into the food. In most cases, I over powered all interior lights with a strobe or LED light to avoid multiple colors on the food. At times, I am able to use natural light and a few reflectors to bounce light back into the food.
